Pork chops - what a treat!

Hi guys!  I've been craving pork chops lately.  I know that's terrible.  Hi in fat, etc - but usually I make each 1" Husker chop fit 2 meals and add lot's of veggies, etc with it.  That helps counter the fat in 'em.  I wanted to try something a little different than the usual grilled chops and I found this recipe on the Betty Crocker website.  It was so good.  I did remove the lime zest per the comments on the recipe and used the cumin powder instead of the Tablespoon of cumin seed since I didn't want to run to the store.  


I used a George Foreman grill so the grilling instructions don't really apply to me  - but I added them just in case you need them.  I made green beans and couscous to go with it and it was so good.  Give it a try and if you have another recipe for pork chops that you like be sure to share it in your comment.  Thanks!
Grilled Cumin Rubbed Pork Chops
The Rub:
2 Tablespoons grated lime peel
1 Tablespoon cumin seed
1 Tablespoon cracked black pepper
1/2 teaspoon salt
2 Tablespoons olive or vegetable oil
1 clove garlic, finely chopped
4 1" pork chops, bone in (about 2#'s)


Heat your grill for direct heat.  Remove any extra fat if it's there.  In a small bow, mix your Cuban Rub ingredients and run evenly on both side of your pork chops.


Cover and grill pork 4-6" from medium heat 8-10 minutes, turning frequently until your pork is no longer pink and meat thermometer inserted in the center reads 160 degrees F.  Garnish with mango slices if you'd like.
