What's in my crock pot....

The summer has already started - 95 degrees this last week already! Ugh. I've decided to make things easy on me and my electricity bill (which is already going to be very high thanks to the heat) and I will be doing a lot of crock pot cooking. 

I thought I'd share my favorite links with you for crock pot recipes and also a great recipe I make quite a bit. Be sure to share your favorite recipe in the comments if you'd like or tell me your favorite crock pot recipe if you have one.  


A Year of Slow Cooking was started by Stephanie o'Dea a few years ago when she set out to see if she could cook her family healthy, nutritious and yummy meals everyday for a year. She succeeded and has been doing it ever since.

A Year of Slow Cooking has evolved from your regular cooking blog to a business for her (congrats Stephanie!) and she now has 2 cookbooks to her name along with a great blog packed full of delicious crock pot meals, desserts and more for us to all enjoy!

Today I have in my Crock Pot a slight variation of Stephanie's Old Fashioned Pot Roast (I'm looking forward to a juicy roast tonight!). I didn't have all of her ingredients - so here's my version:

Old Fashioned Pot Roast
1 # beef chuck roast (I'm not a big meat eater - love me some potatoes/carrots!)
1 teaspoon salt
Several turns of the pepper grinder
A good shaking of garlic powder
1 tablespoon olive oil
1/2 medium onion, chopped in big pieces
4 medium potatoes, cut into 2" chunks
1/3 bag of baby carrots
3 Tablespoons Worcestershire sauce
Cup of water (I didn't have beef broth)

Brown the roast in a skillet and olive oil (I probably used about 3 Tablespoons/once around the pan). While browning I cut up the potatoes, dumped in the carrots, added the meat when browned and then chopped up 1/2 a onion and put that on top. I then added the seasonings, Worcestershire Sauce and poured about 1 cup of water over all.

Set your crock pot to cook 6 hours (I have a 6 qt crock pot that is programmable) and then let it roast away. After 6 hours if your meat falls apart it's definitely done if not give it a couple more hours or so.

Sweet Surrender - to Fudge!

My thoughts:
Fudge Fixx CupsI thought the Fudge Fixx cups are a great idea. I loved that the cups were easy to hold, you don't have to cut the fudge or get fudge all over your fingers while your trying to eat it. You have a choice of 73 different flavors in a 3 oz cup and it comes with a tiny spoon - just dip and enjoy!

I received 6 of the flavors: Chocolate Peanut Butter, Cappuccino Walnut, Key Lime, Orange Creamsicle, Pumpkin Pecan and Raspberry Chocolate.

Personally the Chocolate Peanut Butter was my favorite. If I had gotten 6 cups of it I would of hoarded it all (and no I wouldn't of shared it!). There were 4 other friends in my little group - Melissa, Tasha, Nick and Letrice and we thoroughly enjoyed our little treats. Melissa and Tasha both liked the Pumpkin Pecan and Raspberry Chocolate, Nick is a coffee fiend and he snagged the Cappuccino right off the bat (he said it tasted like a Vanilla Hazelnut Cappuccino kinda) and Letrice tried the Orange Creamsicle and a little of my Chocolate Peanut Butter. Of all the fudges we all agreed the Key Lime and Orange Creamsicle were a little too sweet - especially the Key Lime. If you like Key Lime or Lemon Meringue you will like the Key Lime though - it's sweet and tangy like the pies. The Pumpkin Pecan definitely tasted like Pumpkin Pie and the Raspberry Chocolate is very fruity tasting.

Yum! Yum!

The Fudge Fixx Cups are $5 and would make a great addition to a Care Package for a student or to include in a package for someone in the military. Tape a little candle to the top and send it as a birthday gift or even as a anniversary gift.

My Thoughts:
My Stubborn Heart was written by debut author Becky Wade and I loved it. The book is a little slow but it flows beautifully and is very well written. I loved how the book opens with Kate and her grandmother arriving at the old family home to renovate it and Kate falls in love with it. Becky walks us through this old home and it almost feels as though it's another character in this book - along with Morty, Velma, William, Peg and Gran - 5 seniors who know how to have a good time at their Friday night poker dinners especially when they decide to do a little matching of their own with Kate and Matt.


I think of all the characters in this story Matt was my favorite. He has a tragic story that pulls the heartstrings and you can't help but hope that he recovers enough to allow Kate close to him not only for romance but because she is instrumental to helping Matt learn to trust and lean on God again.


This is a wonderful story for anyone to read. I don't think most teens will be very interested (but you never know) just because there isn't a lot of action in it. There is a great message for Christians and non-Christians who may pick it up that God is there to support us and we can lean on Him even when things have fallen apart.

Guest Post: Living For Lily

It all started when I gave birth to my beautiful daughter Lily on August 4, 2005. After an easy birth, I was surrounded by my friends and family. I never felt safer or more secure and I had no idea what was about to happen.

Soon after I returned to work, I could tell that something was not right. While some people could say that the tiredness and fatigue were a natural part of becoming the mother of a newborn, I quickly realized that something was wrong. It took dozens of tests before I got back the dire diagnosis of mesothelioma cancer on November 21, 2005.

I have never felt so stunned or panicked as I did then, but more quickly than I would have thought possible, my resolve firmed. I realized that I need to rally my strength and my will, and I needed to fight for the possibility of staying with my husband and my daughter. I couldn’t stand the thought of being apart from them, and so I opted for the most drastic treatment plan.

On February of the next year, before Lily was even a year old, my husband and I flew to Boston for a extrapleural pneumenectomy. This procedure removed one of my lungs, something that was terrifying to think about. I remained in the hospital for 18 days under observation, and then, two months later, I started a round of chemotherapy and radiation.

During this time, I had to be apart from my beloved daughter. We weren’t sure what to do with her while we were in Boston, but my parents rose to the challenge. They brought Lily into my childhood home in South Dakota, and they did this even knowing that they both had to work. Their community came to their rescue, and their church group stepped in to make sure that Lily was always taken care of. Imagine how touched I was when my mother told me about girls that I had babysat showing up on my doorstop to offer to help out with Lily!

I won’t say that there weren’t dark moments. After all, the treatment I chose was extremely rough on my body, and there was plenty of time away from home. My daughter was growing so quickly and I wasn’t around to see it, though the people around me did their best. My mother emailed plenty of pictures and my husband printed them out for me on a community printer. All of my nurses stopped by on a regular basis to see how my daughter was growing, and it made me smile even if I occasionally had to blink back tears.

Life is funny sometimes. I never knew what an amazing support network I had around myself before I got cancer, and now that I do know, I feel grateful every day. This is something that makes a huge difference to how I think about things, and it gives me hope.

Now, over 6 years later, her story has been helping people all over the globe. Make your own healthy dogfood!

Ed has a very informative site that includes recipes, videos that show how to make homemade food for your pet and he also personally answers any questions you may have on working with picky or sick dogs. Check this out:

If you have a dog with allergies or food sensitivities - he can help you with that as well. Each of his recipes use  ingredients you get from the grocery store. You can pick up these ingredients at the same time you are getting your own food - prepare it, freeze it and you'll have enough (depending on how much your dog eats) for quite a while.

The Funny, Broken, Love of Parenting
I click open a Facebook message. A friend has sent me a word search and tells me to let my eyes fall onto the image and take note of the first three words that I see. These are the words that best describe me, she promises.
I shrug, take a sip of coffee, and glance at it. “Funny,” “broken,” and “love” are my words.
When I close the message, I’m tempted for a moment to try again. What other words are hidden in that tangle of letters? Maybe on my second try, my eyes will land on a combination such as “smart,” “attractive,” and “successful.” (That would be nice.)
I don’t give it another try, though. The words I read the first time are just right considering how I’ve been spending my days for the past several months, thinking and writing about the family in which I am the wife and the mother and about my family of origin, where my story began.
Funny, broken, love - sounds like family.
MOMumental: Adventures in the Messy Art of Raising a Family is about my own missteps and small victories as a mother. Over the years, after beginning my parenting journey – as so many of us do – staggering under the weight of the expectations I had for myself, I’ve loosened up. I’ve come to learn that none of us is perfect. We all fail, misunderstand our kids sometimes, and mess up in countless ways. In MOMumental, I share stories of some of my “epic fails” as a mom.

The dire messages that flash on the computer or television screen that warn what a mother absolutely must or must notdo no longer hold me tightly in their grasp. I now look at myself – and at other mothers – with less judgment, knowing that we all work it out, there is no manual for motherhood, and that the most important thing in raising kids is to be authentically connected with them.

(And a person can do that whether she serves microwaved macaroni and cheese to her kids for lunch every day or gives them homemade bread and a sampling of organic greens from her vegetable garden. Whether or not she homeschools them, uses “the family bed,” or exposes them to Mozart by the time they are six days old.)

I hope in sharing my own personal – and often quite cringe-worthy – story in MOMumental, other parents will show themselves, and other parents, more grace as we raise our children.

To me, those three words – funny, broken, and love – are great ones to reflect on when I think about the gift of family. To be able to enjoy our kids, repair our relationships with them when needed, and most of to love our children like crazy covers a multitude of parental crimes and misdemeanors.

I loved how her eBook teaches you what kind of pots to use, when to water it, feed it, pick it, how to tell if it's not getting enough light and how to preserve it for the winter. Another thing I really liked was that she lists which herbs do well facing which direction. My apartment is a walk out basement and faces West. I have a driveway that also faces west and I am planning on moving my veggies out during the day - but it was really nice to know if I put Basil and Rosemary on the South side of the house they will do better than if I put them on the West side. I'm planning on printing off this eBook to make it easier to read and refer to when I have questions ~ and as soon as she has a book on Container Gardening for Veggies & Fruit I plan on adding that one to my notebook.
